I’ve just added these cookies to my repertoire of “must bake” cookies for the holidays. They are easy, crispy , light as a feather and oh so-flavorful. The addition of the instant espresso make these cookies perfect to serve with espresso or as an accompaniment to Affogato al Caffe.
