The weather was cold and outside it was pouring rain, but in my kitchen, the sweet, piquant smell of lemons was wafting throughout as the French Yogurt Cake baked. No wonder the French home cooks bake this cake-it’s so easy, delicious and versatile. The cake is perfect with a lemon marmalade glaze, but can be split and filled with lemon cream, spread with jam, or can be transformed into a luscious strawberry shortcake.Almond meal replaced the ground almonds and I found that heating the lemon marmalade first before straining it gave me a little more glaze.
