Piloncillo is unrefined sugar that has not been processed. Because it has not been processed, it has more of a molasses flavor and is richer than its dark brown sugar cousin. I hope to post some recipes using piloncillo in the next few days, but I wanted to post this black and white image to BWW #124 hosted by Haalo.
